Two Great Sweet Treats for the Long Weekend

It’s a great time to bring family together over a long-weekend, Rhodes Quality has teamed up with celebrity baker Sebastian Newman to add some sweetness to your special family time.

Two deliciously simple recipes for you to try: Granadilla & condensed milk baked cheesecake and an Easter rocky road.

GRANADILLA & CONDENSED MILK BAKED CHEESECAKE

Recipe by Sebastian Newman in conjunction with Rhodes Quality Serves 8

Ingredients:

115g Rhodes Quality granadilla pulp
200g shortbread biscuits, crushed
80g melted butter
500g cream cheese
385g condensed milk
4 eggs300ml cream
3tsp vanilla 

METHOD
Preheat oven to 140°C. Mix butter and crushed biscuits together and press into a 23cm loose bottom tin. Place into fridge to set. Beat the cream cheese and condensed milk together until thick. Add the eggs cream, vanilla and Rhodes Quality granadilla pulp. Pour onto prepared biscuit base and bake for 1h15min until just set. Switch oven off and leave oven ajar until cheesecake has cooled down to prevent cracking. Serve with meringue or cream, with more granadilla swirled through.

EASTER ROCKY ROAD

Recipe by Sebastian Newman Serves 10

Ingredients:

100g Butter
150g Milk Chocolate
200g Dark Chocolate
2 Tbsp Rhodes Quality Very Cherry Jam
2 Tbsp Cocoa Powder
200g Speckled Eggs
100g Mini Shortbread Cookies
50g Mini Marshmallows

METHOD
Melt together the chocolates and butter. Add the cocoa powder and Rhodes Quality Very Cherry Jam. Allow to cool. Mix in the speckled eggs, shortbread cookies and marshmallows until covered in the chocolate. Pour into your lined baking tin and pat down until even. Leave it to set in the fridge for about 2 hours until firm. Cut into squares and enjoy.
